About the Recipe

Enjoy raw radishes on a small slice of toasted bread and cheese. With the tang of the radishes that contrasts with the creamyness of the cheese, this dish is sure to be a delight! Serve as an "aperitif" or as a light summer meal.

  • 8 pink radishes (or more to taste)

  • 4 slices of bread (farmhouse bread)

  • ½ cup filled of fresh cheese (it can be goat cheese, cream cheese or ricotta)*

  • A few sprigs of chives, dill or parsley to taste

  • Salt and pepper to taste

  • Olive oil (optional)

*Note: for a lighter version, replace half the cheese with 0% plain yogurt.

  1. Toast the bread slices until golden and crisp.

  2. Remove the leaves from radishes.

  3. Wash the radishes and slice them thinly (without peeling!).

  4. Generously spread the cheese of your choice on the slices of toasted bread.

  5. Arrange the radish slices on top of the cheese.

  6. Finely chop the chives (or herbs of your choice) and sprinkle over the toast.

  7. Add a pinch of salt and pepper. If desired, add a drizzle of olive oil for an extra touch of flavor.

  8. Serve chilled and eat immediately to keep the bread crunchy.
