About the Recipe

Do you have celery leaves and don’t know what to do with them? Try our Celery and Apple Salad! This refreshing and crunchy recipe is perfect for using the entire celery, reducing food waste. The celery leaves add a unique herbaceous flavor that pairs perfectly with juicy apples and crunchy nuts.

Ingredients

  • 4 celery stalks, thinly sliced

  • 1 cup celery leaves, chopped

  • 2 apples, thinly sliced

  • 1/2 cup nuts, chopped

  • 1/4 cup raisins

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the sliced celery, celery leaves, apples, nuts, and raisins.

  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  • Pour the dressing over the salad and toss well to coat all ingredients.

  • Serve immediately or refrigerate for an even fresher salad.


Note : if you're serving the salad as a main course, this recipe will give you 2 servings. As a side dish, it can make up to 4 servings!
