About the Recipe
Raw radishes are a little pungent and people often dislike them because of this. By cooking them, they become softer and reveal a pleasantly sweet side. They can accompany many a meat or fish dish, or even be added to a salad!
Ingredients
1 bunch radishes (approx. 300 g), washed and cut in half
2 tablespoons olive oil
1-2 teaspoons honey
Salt and pepper to taste
1 tablespoon lemon juice (optional)
Fresh herbs, chopped (parsley or thyme)
Instructions
Preheat the oven to 200°C (400°F).
Wash the radishes and cut them in half. Leave them radishes whole if they are very small.
In a large bowl, combine olive oil and honey. Add salt and pepper to taste.
Place the radishes in a bowl. Mix well to coat them evenly with the marinade.
Arrange the radishes in a single layer on a baking sheet.
Roast in the oven for 20-25 min, or until they become tender and lightly browned.
Sprinkle with chopped fresh herbs before serving.
If desired, add a dash of lemon juice for a touch of freshness.
