Ingredients

  • 2 medium beets, cooked and peeled

  • 1 can of chickpeas (about 400 g), drained and rinsed

  • 1/4 cup of tahini

  • 2 tablespoons of lemon juice

  • 2 cloves of garlic

  • 2 tablespoons of olive oil (or another vegetable oil)

  • Salt and pepper to taste

Instructions

  1. Cut the cooked beets into pieces.

  2. In a blender or food processor, combine the beets, chickpeas, tahini, lemon juice, garlic, oil, salt, and pepper.

  3. Blend until smooth and creamy. If the mixture is too thick, add a bit of water until you reach the desired consistency.

  4. Transfer the hummus to a serving bowl and refrigerate for at least 30 minutes before serving.


Additional note: For a quick version, you can use store-bought plain hummus. Simply incorporate the cooked beets into the purchased hummus, and you're done! It's a convenient way to save time without sacrificing taste!
