Ingredients
2 medium beets, cooked and peeled
1 can of chickpeas (about 400 g), drained and rinsed
1/4 cup of tahini
2 tablespoons of lemon juice
2 cloves of garlic
2 tablespoons of olive oil (or another vegetable oil)
Salt and pepper to taste
Instructions
Cut the cooked beets into pieces.
In a blender or food processor, combine the beets, chickpeas, tahini, lemon juice, garlic, oil, salt, and pepper.
Blend until smooth and creamy. If the mixture is too thick, add a bit of water until you reach the desired consistency.
Transfer the hummus to a serving bowl and refrigerate for at least 30 minutes before serving.
