Marinated zucchinis are the perfect way to add a touch of freshness and flavor to your dishes. They marinate raw in a mixture of olive oil, vinegar, and herbs, developing delicious flavors and a crunchy texture. Easy to prepare, they're ideal as a side dish, in salads, or even as a sandwich topping.
Ingredients
2 medium zucchinis, sliced into thin rounds or ribbons
3 tablespoons olive oil
2 tablespoons apple cider vinegar or balsamic vinegar
1 garlic clove, finely minced
1 tablespoon lemon juice
1 teaspoon honey (optional, for a touch of sweetness)
Salt and pepper, to taste
Fresh herbs (basil, parsley, mint), finely chopped
Pinch of red pepper flakes (optional, for a bit of heat)
Instructions
Wash the zucchinis, then slice them into thin rounds or ribbons using a mandoline or a sharp knife.
In a bowl, mix the olive oil, vinegar, minced garlic, lemon juice, honey (if using), salt, and pepper.
Add red pepper flakes if you like a bit of spice.
Place the zucchini slices in a sealable container.
Pour the marinade over the zucchinis and toss well to coat evenly.
Add the fresh herbs and toss again.
Cover the bowl and let the zucchinis marinate in the refrigerator for at least 30 minutes to allow them to soften.
Serve the marinated zucchinis as a side dish, in a salad, or as a sandwich topping.
Additional Note: You can keep the marinated zucchinis in the refrigerator for 2-3 days in an airtight container. They become more flavorful over time!
