Ingredients
8 celery stalks, cut into 5 cm pieces
1 onion, sliced
2 garlic cloves, minced
1 cup vegetable broth
2 to 3 tablespoons olive oil
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
Instructions
In a large skillet, heat the olive oil over medium heat.
Add the onions and garlic, and sauté until tender and fragrant.
Add the celery pieces to the skillet and sauté for 5 minutes until they begin to soften.
Pour the vegetable broth into the skillet and add the thyme and parsley.
Cover the skillet and simmer on low heat for 20-25 minutes, until the celery is tender.
Season with salt and pepper before serving.
Notes : you can prepare them in advance and reheat them in the oven or microwave when you need them.
