Zucchini brownies bring the magic of transforming a classic dessert into a lighter, surprise-filled version! By incorporating grated zucchini into the batter, you end up with brownies that are incredibly moist and flavorful without sacrificing taste. Ingredients
Dry Ingredients:
3 cups all-purpose flour
½ cup cocoa powder
Pinch of salt
Wet Ingredients:
2 eggs
¾ cup sugar
1 cup oil
1 teaspoon vanilla extract
2 zucchinis, grated (do NOT drain)
Instructions
Preheat the oven to 350 ˚F (180 ˚C).
In a bowl, mix together the all-purpose flour, cocoa powder, and a pinch of salt.
In a food processor, blend the eggs, sugar, oil, and vanilla extract. Add the grated zucchinis and mix until smooth.
Pour the wet mixture into the bowl with the dry ingredients and mix until well combined.
Transfer the mixture into a greased or oiled 8x8 inch (20x20 cm) square pan.
Bake for 35 minutes or longer if you prefer them more done. Check doneness by inserting a toothpick into the center; it should come out clean.
Let cool before cutting into 16 equal portions.
Additional Notes:
If you don’t have a food processor, you can mix by hand. The zucchini pieces will be more visible, but this won’t affect the taste.
For extra fudgy brownies, bake for a shorter time. For firmer brownies that hold together better, extend the baking time.
