Appearance: Beets are typically long root vegetables with large green leaves. The classic variety has dark red or purple skin and flesh. The Chioggia beet, while similar in appearance to the classic beet, features a striking pink and white streaked interior. Yellow beets, with their orange skin and slightly less sweet flavor, are another vibrant option.

 

Texture and Taste: Beets have a firm, slightly crunchy texture when raw, becoming tender and soft after cooking. Their taste is sweet, earthy, and occasionally a bit bitter. Flavor can vary by variety and cooking method—golden beets, for instance, are somewhat less sweet.

 

Buying: Select beets that are heavy, firm, and have smooth, crack-free skins. Smaller beets are often sweeter and more tender. Avoid beets that are soft, wrinkled, or have dark spots. If the leaves are present, they should be green and fresh.

 

How to Use Them: Beets are highly versatile. Here are some ideas:

  • Raw: For salads, grind or thinly slice. They add vibrant color and natural sweetness.

  • Roasted: Dice or slice, season with olive oil, salt, and herbs, then roast. Roasted beets are great as a side dish or in salads.

  • Boiled: Cook until tender, then peel and slice. Serve hot or cold, with a splash of balsamic vinegar.

  • Soup: Use them in borscht or add them to soups for a rich, colorful flavor.

 

Extra Tip: Don’t discard the beet leaves—they’re edible too! To maximize nutrients, consider cooking beets with their peel on, but be sure to wash them thoroughly.

 

Arrival Season: Beets are available almost year-round due to their excellent storage capability. In Quebec, you can find local beets from early July until late May.

 

Storage:

  • In the Fridge: Store whole beets in the crisper drawer of your refrigerator. They’ll last up to 2 weeks. For longer storage, keep a part of the stems attached.

  • Freezing: For extended storage, cut into pieces and blanch before freezing. This keeps them fresh for several months.

  • Canned or vacuum-packed: Consume within 2 to 4 days after opening.

 

Nutritional Information: Beets are rich in folate (vitamin B9) and manganese, supporting cardiovascular health and brain function, respectively. They also offer fiber for digestion and contain vitamins A, B6, C, K, potassium, magnesium, and iron.
